lemon djon salmon.



serves: 4
time: 50 minutes

ingredients
-2 lemons, thinly sliced + 1 lemon for garnish
-20-30 sprigs of mixed fresh herbs + 2 tablespoons chopped & divided
(recommended herbs: thyme, tarragon and oregano)
-1 clove of garlic
-1/4 teaspoon of salt
-1 tablespoon of djon mustard
-1 pound center-cut salmon, skinned


preparation
-preheat oven to 450 degrees.

-lay two 9-inch pieces of heavy-duty foil on top of each other. arrange lemon slices in two layers in the center of the foil. spread herb sprigs over the lemons. with the side of a knife, mash garlic with salt to form a paste. transfer to a small dish and stir in mustard and the remaining 2 tablespoons chopped herbs. spread the mixture over top & bottom of the salmon. place the salmon on the herb sprigs.

-bake the salmon in foil; bake until the salmon is opaque in the center, 30-40 minutes. cut the salmon into 4 portions and serve with lemon wedges (discard herb sprigs and lemon slices).

for sides i served mine with baked aparagus & rice

I just commented and I think the internet freaked so it didn't post! But that looks absolutely delicious - and at 212 calories it is a must have dish. I'm on a beach vacation right now, so I am dying for seafood every night! Last night we made dijon seared Tuna - was fabulous, but I'm hoping to fit your dish in this week! Thanks for posting!
