guest post: the cheap, adorable date night.

Hello lovelies! I'm Brittany from Lady Peaceful, Lady Happy.
When Liz asked me to be a guest blogger, I was super excited to share my latest date night idea with you all. It's really simple and really delightful. It takes the typical "Dinner & Movie" date and turns it into something more intimate and sweet. The Husband and I have been trying to eat a ton of veggies to give our bodies a break from all the meat we've been grilling in our backyard. Well, mostly me but he is good to play along. Also, we are entertaining the ever lovely idea of buying a home and so cutting expenses any way we can to save up for our future cottage is key.
That said,
PRESENTING:
The Cheap, adorable date night!
 
Dinner: "Lady Italy" Salad
 
  • 1 large (or 2 small) head(s) romaine lettuce, washed, patted dry and cut into big bite size pieces
  • 2 cups fresh spinach
  • 1 large red bell pepper, chopped
  • 1 cup chopped cucumber
  • 1 large carrot, shredded
  • 2 tomatoes, sliced
  • Mozzarella balls sliced (whatever amount pleases you)
  • 1 avocado, sliced
  • Drizzle 2 1/2 cups Balsamic Vinaigrette Dressing
and WAHLAH!
 
 
Side dish: Phyllo Wrapped Asparagus
(the cheaters version)
 


  •   8 or 9 asparagus spears, depending on size
  •  2 lemons
  • 1 package of Crescent Roll dough
  • 1/4 cup finely grated Parmesan  

Pre-heat oven to 375 degrees.
 Squeeze lemons and drizzle juice over asparagus spears. Lightly salt and pepper. Let sit for 5 minutes.
 Next, roll each asparagus spear in the individual dough triangles, set on baking sheet, sprinkle with Parmesan.
 Cook for 15 minutes or until dough is golden brown.

just about anything to secure an adorable blanket fort.
